I ate the soup for both breakfast and lunch. It was very yummy. With breakfast, I also had a half grapefruit. With lunch, I also had an apple.
Dinner was a salad of some unknown lettuce type with ranch dressing and several kinds of cheeses. That was followed by buffalo burgers which were seasoned with cayenne, salt and pepper.
Buffalo (more properly called bison) is a member of the cattle family. It was the cattle of North America when settlers began arriving in the 1500’s from Europe. In this case, I am definitely going for the American version. It is much tastier than standard beef cattle and much more lean.
It is also easier here to get organic ground bison than to get organic ground beef. I bought my burgers frozen already formed into patties at the local grocery store. I couldn’t find organic ground beef in either of the local grocery stores I’ve checked so far. There is still one more store that is more likely to have it because we live in ranch country and the third store’s customers are mostly ranchers. I’ve checked with a local family rancher and he confirmed that the local beef is organically raised.
In any case, the buffalo burgers were extremely tasty. I’ll be having them more often.
I had dessert for the first time today since starting this way of eating (that wasn’t limited to fresh fruit). Diamond Organics has an organic coconut gelato that is excellent. I had a European portion (about one American scoop).
BTW, I wasn’t winded after my morning one mile walk. Sometime this weekend or Monday, I’ll probably lengthen that walk to two miles.
