Chimichuri

One of my favorite dishes this week is a traditional Costa Rican salad called chimichuri.

Making chimichuri is easy.  First you chop tomatoes, onions, cucumber and cilanto (more tomatoes and cucumber than onions… more onions than cilatro).  Mix them together and dowse with lime juice.

Then shred cabbage and place a nice thick bed (about 1/2″ thick) on a plate.  Spoon the above mixture over the cabbage.  Then dig in and enjoy.

Everything is raw.  It’s delicious.  It’s also all low-glycemic and low calorie.  It really doesn’t matter what diet plan you are on, I can’t think of a single diet plan that would disapprove of this dish.

And it’s yummy!
