Dinner yesterday turned out to be ice cream.
This recipe included:
1 can of coconut milk
About 10 drops of stevia
1 tablespoon of vanilla extract
8 oz of frozen raspberries
1/4 cup of coconut flakes
All of that was added at the same time the the ice cream maker (double the above actually… my wife ate the other half) and ran for an hour or so.
It was all eaten fresh.
Breakfast this morning was fried eggs (in butter with salt and pepper) served over sausage crumbles and broccoli. I usually like cauliflower for this recipe, but didn’t have any. Broccoli was actually pretty good.
Lunch will be halibut fried in butter and seasoned with spike. It’s the last pound (splitting with wife) of the fish my father-in-law caught in Alaska a month ago.
Dinner will be an extended family barbeque for American independence day. We are bringing ostrich steaks.
