My wife and I both love this one.
Most crab cake recipes are mostly filler… breading and all kinds of high carb stuff.
This one is compliant with this week’s “meat only” diet which allows for some small amount of spices or other flavoring.
Here’s what you need:
1/4 stick of butter
1 pound lump crab meat
2 eggs
4 teaspoons of green herbs
1 teaspoon caraway seeds
1 teaspoon fennel seeds
1 teaspoon celery seeds
The green herbs change each time. Sometimes I use parsley, majoram, sage, italian seasoning, etc. I just grab four green herbs that sound interesting at the time.
I mix everything except the butter in a large glass bowl. Then I let it sit in the fridge for an hour or more.
Then I make patties and fry them in butter.
Then I eat them all up… except the ones my wife eats before I can get to them.
They are very yummy.
